Alligator, Gar and Rabbit--Oh My!

On Wednesday, September 13th, Vanishing Paradise teamed up with Executive Chef Nathan Richard at Cavan in New Orleans and Mudbug Brewery to host a dinner focusing on the bounty of Southeast Louisiana’s freshwater marsh.

On Wednesday, September 13th, Vanishing Paradise teamed up with Executive Chef Nathan Richard at Cavan in New Orleans and Mudbug Brewery to host a dinner focusing on the bounty of Southeast Louisiana’s freshwater marsh. 

The marsh-to-table supper highlighted freshwater fish and wildlife species that will benefit from coastal restoration, and are just as tasty as some of our traditional Louisiana dishes.

Sixty-five adventurous eaters came out to support habitat restoration and protection for our delta’s freshwater species. The evening was spent indulging in five delicious beer and dinner course pairings with old and new Vanishing Paradise supporters alike. 

Chef Richard spoke to a packed room about why he chose to host this dinner that unique species--both invasive and native.

All the courses were delicious and had guests “thinking outside the box."

Each course of the supper was paired with a tasty brew from Mudbug Brewery of Thibodaux, LA. Brance Lloyd, owner of the brewery, introduced his brews and team. He spoke about the Mudbug Noir Lager that was brewed specially for the supper, and would also be featured in his taproom. The Mudbug Noir is a black lager that mimics the dark waters of the swamp, and was crafted from chocolate roasted grains. This beer was paired with the alligator and garfish charcuterie board.
